Cultured dextrose is a biological preservation ingredient created through controlled fermentation of dextrose substrates with food-grade lactic acid bacteria (predominantly Propionibacterium freudenreichii or related taxonomic classes). This biochemical route naturally synthesizes functional organic metabolites, including propionic acid, acetic acid, lactic acid, and active bacteriocins.
Unlike synthetic preservatives that universally disrupt osmotic balance (such as calcium propionate or potassium sorbate), cultured dextrose works selectively. The natural organic acids in undissociated forms penetrate the cell walls of molds, yeasts, and Gram-negative pathogens. Once inside the neutral cytoplasm, they dissociate, lowering internal pH, exhausting cellular ATP pumps, and stopping microbial cell division.
